Serves 3-4.
Ingredients:
- 400g beef braising steak
- 100g smoked bacon lardons
- 1 medium onion, chopped
- 1 large bell pepper, chopped
- 1 habanero pepper, chopped
- 2 tomatoes, chopped
- 1 tsp chopped garlic
- 1 tsp smoked paprika
- 1 tsp oregano
- 1 tab maple syrup
- 500ml bottle of beer
- a little salt and pepper
- oil for frying
- Set the oven to 120°C.
- Heat the oil in a medium Dutch oven or casserole dish on the hob. Add the bacon and fry until it is just beginning to crisp.
- Add the onion and garlic and fry until soft and lightly browned.
- Stir in the paprika, then add the beef. Fry until the beef is brown.
- Add the peppers and tomatoes and stir in the oregano and maple syrup. Add a dash of salt and a little black pepper. Then pour in just enough beer to cover everything (probably about 2/3 of the bottle). Drink the rest.
- Bring to a simmer, then cover with the lid and place in the oven. Leave for four hours.
- Remove from the oven. Remove the lid and simmer on the hob until reduced and thickened.
- Serve with large portions of macaroni cheese.
