Recipe: Slow-cooked spicy beef

Serves 3-4.

Ingredients:

  • 400g beef braising steak
  • 100g smoked bacon lardons
  • 1 medium onion, chopped
  • 1 large bell pepper, chopped
  • 1 habanero pepper, chopped
  • 2 tomatoes, chopped
  • 1 tsp chopped garlic
  • 1 tsp smoked paprika
  • 1 tsp oregano
  • 1 tab maple syrup
  • 500ml bottle of beer
  • a little salt and pepper
  • oil for frying
  1. Set the oven to 120°C.
  2. Heat the oil in a medium Dutch oven or casserole dish on the hob. Add the bacon and fry until it is just beginning to crisp.
  3. Add the onion and garlic and fry until soft and lightly browned.
  4. Stir in the paprika, then add the beef. Fry until the beef is brown.
  5. Add the peppers and tomatoes and stir in the oregano and maple syrup. Add a dash of salt and a little black pepper. Then pour in just enough beer to cover everything (probably about 2/3 of the bottle). Drink the rest.
  6. Bring to a simmer, then cover with the lid and place in the oven. Leave for four hours.
  7. Remove from the oven. Remove the lid and simmer on the hob until reduced and thickened.
  8. Serve with large portions of macaroni cheese.
